To talk or argue until you are blue in the face means that you are discussing something for a very long time with someone, but despite your best efforts, you cannot persuade this person to see things the way that you do.
Becoming blue in the face most likely refers from the lack of oxygen you will suffer as you waste not only your time but also your energy on someone who will remain unconvinced.
